Eggplant with Cheese Sauce

I wanted to try to cook some new stuff this week being Valentine’s week and all… Last night I found a recipe for an Eggplant and Cheese Sauce Dish. It was easy to make and tasted good too.

2 large eggplant (cut into 1/4 inch thick slices)
2 1/2 cups White sauce
3 1/2 cups Grated cheese
4 tbsps of olive oil
1. Sprinkle the eggplant slices with salt and drain for 30 minutes. Rinse slices well and pat dry.
2. Heat oil on the skillet and cook the eggplant till golden brown. Remove the eggplant and set aside.
3. Preheat oven to 350 degrees.
4. Mix most of the grated cheese into the white sauce.
5. Arrange the eggplant in an oven safe dish, alternating with the white sauce. On your final layer of sauce, sprinkle with the remaining grated cheese.
6. Bake for 30-40 minutes till brown.
